If you love cookies but also care about getting some protein in, these Café Mocha Protein Cookies are the perfect middle ground. They are soft, lightly crisp on the edges, and have a rich coffee-chocolate flavor that feels indulgent without the guilt.
I made these using Neutraleaf Café Mocha Plant Protein Powder instead of regular cocoa powder, which adds both flavor and protein without compromising texture.

Ingredients
- Butter – 1/2 cup
- Coconut sugar or jaggery – 1/2 cup
- Vanilla essence – 1 teaspoon
- Whole wheat flour – 1 cup
- Baking soda – 1/2 teaspoon
- Neutraleaf Plant Protein Powder (Café Mocha) – 1/4 cup
- Corn flour – 1 tablespoon (optional, for softer cookies)
- A pinch of salt
- Milk – 1/4 cup
- Chocolate chips – as needed
Preparation Method
- In a bowl, add melted butter, coconut sugar or jaggery, and vanilla essence. Whisk well using a hand whisk until smooth and slightly creamy.
- Add whole wheat flour, baking soda, protein powder, corn flour, and salt one by one. Mix everything together.
- Pour in the milk and gently combine until you get a soft cookie dough. No extra liquid or fat is needed.
- Cover the dough and let it rest in the refrigerator for 15 minutes. This helps improve texture.
- Preheat the oven at 180°C for 15 minutes.
- Take the chilled dough, scoop small portions, roll into balls, and gently flatten them into cookie shapes.
- Line a baking tray with baking paper and lightly grease it with butter.
- Place the cookies on the tray, leaving space between each.
- Bake at 180°C for 12 to 15 minutes, until the edges are set.
- Remove from the oven and allow the cookies to cool completely before serving.
